In the heat of Thailand, there is nothing more refreshing than coconut ice cream that is sold by vendors on bikes. Served with sticky rice and topped with all sorts of fun toppings, making this recipe brings me right home!

About Pai:

Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the YouTube channel Pailin’s Kitchen.

Pai was born and raised in southern Thailand where she spent much of her “playtime” in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.

After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via YouTube videos, her cookbook, and cooking classes. I love jackfruit, but I can't get fresh jackfruit here either, but my Mother-in-law, got to love her, has planted 3 trees on our property in Vientiane. So I will have plenty when I retire. try coconut palm sugar its amazing flavour and healthier and vanilla extract has alcohol so adds vanilla flavour and should do the job to replace the vodka

hey can I ask whats the brand of the palm sugar that you used that is so light in color? All I could find is dark colored ones they make my ice cream come out so caramel colored….
