It is very aromatic, sweet and savory and goes well with steaming rice. You can totally skip chicken and increase the quantity of vegetables. You can add any vegetables like, carrots, spinach, mushrooms etc.

Weird way of making it but ok. You're supposed to mix the chicken in with the paste and a small amount of coconut milk before you add in the rest. And curry powder??? Wtf
