you should mix the coconut milk in with the paste in the food processor. Not all of it, but some of it. That will create a nice, smooth paste.

I want to know who is the first one who told all non-Thai cooking channels to use all parts of coriander in Thai curry paste. it's everywhere! We put coriander seeds and roots, not all parts no leaves no trunks, in both Thai red and green curry paste. The colour in Thai Red Curry or Thai Green Curry comes from red or green chilli, not coriander! The taste of coriander leaves, seeds, and roots is completely different. It's totally disaster when I saw ton of coriander in his paste. I don't mind any Japanese mushrooms or unusual veggies he put in his own version green curry. I'm pretty sure other Thais in the comment section of this vid don't mind too. But at least please make the paste more correctly if you want to call it as Thai Green Curry. It feels like you see someone calling egg benedict with ketchup instead of Hollandaise sauce but still calling it as egg benedict. Or maybe someone cook Japanese curry without apple and still call it Japanese. Even Gordon Ramsy cooked Pad Thai in his channel and the taste wasn't right, no Thais called it as Pad Thai. it could be delicious but it's not Pad Thai lol

The important thing of Thai curry is the paste. You can put any veggies and protein you like. you don't need to stick with authentic veggies and protein for each type of Thai curry. If you don't want to waste your time with Thai curry paste, just go to Thai grocery and ask for ready curry paste. it needs 10++ items for paste ingredients if you want to make it for real. Generally, people in Thailand use ready curry paste to cook Thai curry. It's kinda rare to see someone make the paste by themselves. It's not easy to make though unless you are talented homecook. Btw, we have variety of Thai ready curry pastes. Some need to add coconut milk, some don't. Just be careful.

Most important thing making Thai green curry is fry the paste @ half the coconut milk and boil to reduce. Then cook the meat in there so it sucks up all the flavors……………….
